Honey Lime Italian Dressing and Marinade: This is Chef Eric’s first dressing made in 1993 at Stephani’s Main Street Cafe in Monroe Washington! It was our first house dressing. Combining tart bright citrus of fresh lime juice with the sweetness of real honey and savory notes from herbs and vinegar it pairs perfectly with seafood! A fan favorite was always the Hot Seafood salad pictured below. It works excellently as a marinade for scallops, shrimp, white fish or salmon. If you are baking a side or fillet of salmon simply drizzle it over the fish and seal in foil.
