Huckleberry Dressing:  This fat free dressing is loaded with flavor from wild mountain huckleberries most often picked by Stephani herself. There isn’t a berry Stephani doesn’t like to grow, but true huckleberries cannot be domestically produced. There are ample supplies in particular mountainous regions of our area-if you know where to look. Many adventures have been had by our team in pursuit of the wild huckleberry. When you find that perfect spot, the rewards are many! Affected by seasonal variation, they shift in area production, always keeping us on the lookout for the next good patch. Our dressing is sweet but tart and makes any salad better. It is particularly good with mixed greens and thin sliced onions, topped with honey roasted walnuts and feta cheese crumbles. Did your grandmother serve cucumbers in vinegar? For a twist combine thin sliced sweet onions and cucumbers with Stephani’s Huckleberry Vinaigrette!
